Today, it’s all about home made fish and chips with a slight Indian twist to it and a non-alcoholic batter!

Whether you’re a fan of the crispy batter, the soft, flaky fish, or the perfectly golden fries, this iconic dish has something for everyone.

Home made fish and chips is one of the best, simple meals you can make at home for your family!

Not only is this dish easy to muster up, your kids will love it!

For our recipe we shall add a little Indian twist with some light spice.

We will also ensure we keep the fish crispy and crunchy with our non-alcoholic batter.

Fish & Chips Beginners Recipe – Level 1

So this is a very easy to follow recipe, any can try it, even a complete beginner!

Please note this is my own personal method, it is not an ai-recipe!

Integral Ingredients

Ok, so the first step is getting your main ingredients ready.

For this dish they are:

  • Fish fillets
  • Lemon juice
  • Flour
  • Baking powder
  • Turmeric
  • White pepper/red chilli powder
  • Cold sparkling water

The most important ingredient here is the fish. Choose the wrong fish and all your efforts will go down the drain.

But how do you choose the perfect fish for your homemade fish and chips?

What to look for in your fish

Fish & Chips- Preparing your fish

  1. First thing is to make sure it is a white fish. Other fishes’ can be used, but for traditional fish and chips, and also for beginners I’d advise just sticking to white fish.
  2. Fish Fillets – Choose fish fillets when purchasing your fish. This way you will have chunky pieces to work with.
  3. Fresh or frozen? Now we would all like to use fresh ingredients in all our cooking. However with the cost of living crazy prizes, and we can still do a great job with frozen alternatives. So if budget is limited, choose frozen fillets.

Now most supermarkets sell a variety of fish you could make this dish with. Here are three excellent options to choose from:

Types of Fish

Bassa

Bass is a wonderful budget option. You can buy some good sized pieces, albeit not as chunky as Cod but a very good alternative.

Cod

Cod is the original fish and chips Fish. And it is no doubt my favourite fish when I’m making home fish & chips at home.

Now it might be the most expensive, but the best fried fish is always a cod fish.

Haddock

Another fish and chips favourite! Haddock is a wonderful choice for home made fish and chips.

And in my opinion a close second to cod.

Full ingredients list:

  • Fish fillets
  • Salt
  • Lemon juice
  • Chili powder
  • Oil (for deep frying)

For the Batter:

  • Flour (plus extra for dusting)
  • Baking powder
  • Salt
  • Turmeric
  • White pepper
  • Cold sparkling water

Step by step – Home Made Fish & Chips

So these are the steps which we will take:

  1. Marinate the fish with salt, lemon juice, black pepper and chili powder (if using).
  2. In a bowl, combine all the batter ingredients except the sparkling water.
  3. Heat the oil for deep frying.
  4. Just before frying, add cold sparkling water to the dry batter mixture and whisk until smooth.
  5. Lightly dust both sides of the marinated fish with dry flour.
  6. Dip the fish in the batter, then carefully place it in the hot oil. Fry until golden and crispy.
  7. Remove the fish and place it on a paper towel to drain excess oil.
  8. Serve hot with chips, and sprinkle with vinegar and lemon juice.

Each Step in Detail

Marinate fish and chips

So first thing is first, defrost the fish and give it a rinse. Make sure to dry it thoroughly.

Start by marinating the fish in a simple mix of salt, black pepper, lemon juice. chilli powder.

1kg Fish =

  • 1 Tea Spoon Salt
  • 2 Tea spoon Black pepper
  • 1 Tea spoon of chilli powder
  • Squeeze half a lemon.

Marinate it properly and then let it sit and rest in the fridge for around 45 minutes.

Secondly, grab a bowl and whisk together the batter ingredients, excluding the sparkling water for now. It’s the dry mix that’ll give the fish that crispy, golden coating.

For the batter you will need

  • 1 1/2 cup of plain flour
  • A pinch of haldi
  • 1.5 teaspoon of salt
  • 1.5 teaspoon of black pepper
  • 1 tea spoon of baking powder

Next is to add chilled cold sparkling water.

Now the amount of sparkling water depends on your mix. You need to add enough for a smooth batter. Similar to the same consistency of a pancake mix.

Give it a gentle whisk until the batter is smooth and slightly bubbly. The fizz from the sparkling water is what makes the coating light and crispy!

Now, lightly dust both sides of the marinated fish with a little dry flour. This helps the batter stick better when frying.

Next, heat up your oil for frying—aim for around 350°F (175°C) for that perfect crunch.

Dip the fish into the batter, ensuring it’s fully coated, and carefully lower it into the hot oil.

When frying, just add one or two fish at a time if you are a beginner to ensure you don’t loose control when frying. Form more experienced cooks 3/4 pieces at once is fine.

Frying your fish

Fry until it turns a beautiful golden brown and crispy—this should take just a few minutes.

Once done, remove the fish from the oil and let it rest on a paper towel to absorb any excess oil.

Serve your freshly fried fish hot alongside some crispy chips, and don’t forget to squeeze a little lemon juice and drizzle a bit of vinegar over the top for that authentic touch!

Last Words

A few final tips, make sure the oil is hot before you add the fish. Do not over fry the fish, once the batter is golden brown take it out.

Also remember the colder the sparkling water, the crispier your batter!

As mentioned above you can choose any white fish you want. In fact you can choose others too, but fore a more authentic taste Cod, Haddock, Basa and other white fish’s are best.

How do I prevent my batter from becoming soggy?

A soggy batter usually means:

a) The fish has not been dried sufficiently before marination.

b) The sparkling water was not been chilled enough.

c) You don’t add enough sparkling water.
